So, I made Lemon Ice Pops for the Fourth (remember how patriotic they were?) and my sister asked what exactly went into them.
And, since they are so delicious and I keep making more and more because I am eating them at a rapid rate, I thought I’d share so you can indulge yourself with some summertime ice pop perfection.
Plain Lemonade Ice Pop
1 cup sugar
1 cup water
1 cup lemon juice
Heat sugar and water on the stove until dissolved (making what is know in some parts as “simple syrup”) then mix in lemon juice. Chill, then add to your popsicle mold, freeze (we use a zoku and adore it…must be the instant gratification) and enjoy.
Strawberry Lemonade Ice Pop
1/2 cup lemon simple syrup (from above)
1/4 cup blended fresh or frozen strawberries
Mix, chill, freeze, enjoy.
Strawberry or Blueberry Ice Pop
1 cup fresh or frozen berries
1/4 cup lemon simple syrup (from above)
Blend, chill, freeze, enjoy.
Next time I go to the store I’m going to pick up some mint leaves to add to the lemonade pops. Wouldn’t that be a great addition?

Yum! We just got a zoku and I'm going to make these tomorrow. We tried the mojito recipe (grapefruit juice + simple syrup + mint leaves) but were disappointed that we couldn't even taste the mint. So I'll be adding more to mine next time… (btw mint grows like a weed so it's easy to pot and have on hand.)
